Eat Rosemary & remember more stuff!

As I have mentioned before, my knowledge of science is well, minimal but I am very certain eating rosemary wont help but you can make the kitchen smell of rosemary and it can taste amazing.
Where I used to live, I had a rosemary bush in the garden. They are fantastic and yield all year! During that time I used to simply buy a tin of cannellini beans and throw it in a pan with garlic and rosemary, eat it with some bread, amazing!
Tonight i stopped off on my way home and paired it up with some amazing seasonal ingredients
Rosemary with jersey royals, cashew granola, Abergavenny goats cheese & lambs lettuce
For the potatoes
couple of handfuls of jersey royal potatoes
stalks of a bunch of rosemary
Add the potatoes to cold water in a pan with the rosemary stalks and some salt. Gently bring to the boil and simmer for about 15 minutes until the potatoes are soft. Drain and set aside. Cut into halves or quarters depending on how you like them. Roughly chop the remaining leaves from the rosemary and mix with the potatoes. Season.
For the granola
100g spelt flakes or oat flakes
75g cashew nuts, chopped roughly
the leaves from 3 big stalks of rosemary, usually about half the punch
tablespoon of honey
a big drizzle of rapeseed oil or olive oil
salt and pepper to taste
Preheat your oven to 180oc. On a baking tray add all the ingredients and roast for about 10 minutes or until the spelt and cashews are golden. Set aside
Bringing it all together…
a couple of handfuls of lambs lettuce
splash of balsamic vinegar
approx 100g of good quality soft goats cheese
In a bowl dress the lambs lettuce with a little balsamic vinegar or just some oil, salt and pepper.
Simply bring it all together and make it look pretty if you can be bothered!
