The alternatives are much better anyway
So, the news over the past few weeks has been very much flooded with stories about salad production. (sorry about the pun)

Do any of you ever buy 3 icebergs at a time? That’s a lot of Prawn cocktails? We’d end up with a north sea prawn shortage!?
Anyway, on a more serious note it does look like salad prices in general will go up as at this time of yeah we import most of our salad from Spain and the hotter climates of the Mediterranean.
The best option would be to look local. For example, Steve Glover, founder of the Severn project would no doubt be selling some delicious young kale at the moment, which is a delicious British winter salad. Delicious for example simply tossed with some fried chorizo and some almonds and the oils from the pan making an amazing dressing!
Alternatively why not try a salad using British vegetables, Beetroot is always a winner for me. Try simply grating it with some apple and dressing it with some chopped rosemary (a brilliant herb as if you have a bush in the garden it will serve you all year) and some olive oil and a splash of balsamic vinegar. Much better with a pork chop than a mixed salad!
The other delicious substitute id suggest would be to use your store cupboard and freezer! Try simply defrosting some peas and broad beans or any other frozen green veggies the supermarket sells and making a lovely minty salsa verde to bring it all together.
Minty Salsa Verde
handful of garden mint (leaves picked and roughly chopped)
2 tablespoons chopped capers
1/2 teaspoon wholegrain mustard
a couple of anchovies (chopped) (optional)
Juice of half a lemon
good quality olive or rapeseed oil (enough to make a liquid dressing)
Simply bring the ingredients together and season with salt and pepper to taste
Your final option is to just not worry, we still have Peruvian asparagus to keep us going…
